Big Frank's BBQ was founded in 2015 by Pitmaster Frank Boland. Big Frank's BBQ is famous in the DMV area for its mouthwatering sides and meats, always cooked low and slow, never above 225F. Head Hog/Pitmaster, Frank Boland
After years of holding down every restaurant job, excluding hostess, Frank Boland decided to pursue his culinary passions in 2010 at Le Cordon Bleu in Cambridge, Massachusetts. Boland always knew he wanted to cook BBQ and logged over 400 extra hours of practice in order to perfect his craft. Boland completed an externship in California with Chef Bob Hurley before returning to Virginia to start his own BBQ food truck, now known as Big Frank's BBQ.
Boland enjoys all aspects of BBQ preparation from butchering to smoking to curing the meats. His preparation is very traditional. Nothing is cooked over 225 degrees Fahrenheit and the process is very low and slow to allow the meat to cook in its own time. Big Frank’s BBQ has become a staple in the DMV area, known for quality, delicious meats and sides.
Pitmaster, Jonathan Thompson
Thompson has worked in the restaurant industry for 11 years. He got his start at Outback Steakhouse and has worked at various restaurants in the DMV including Cafe Deluxe, St. Arnold’s Mussel Bar, and Red Hot & Blue. Thompson first fell in love with BBQ at Red, Hot, & Blue. He is passionate about the history, tradition, and culture. He invested in his own smoker and began experimenting with different cooks of meat and preparation techniques. His BBQ training is largely self-educated, and he took advantage of every opportunity presented to him to learn more about the art of BBQ.
Thompson’s favorite meat to cook is brisket and his favorite meat to cook is pulled pork and ribs. However, the sides are some of his favorite dishes, and he can often be found enjoying mac and cheese or baked beans. He describes his cooking style as a unique blend of traditional and creative. Thompson blends recognized ingredients with new flavors that elevate each dish.
Big Frank's BBQ is a part of the Hello Hospitality family. Founded in 2009, Hello Hospitality has launched several successful dining concepts across Maryland, D.C., and Virginia including St. Arnold's Mussel Bar (three locations), Aunt Betty & Uncle Bubba's Chocolate Chip Cookies, and Big Frank's BBQ.
